For the Chicken:
4 6oz skinless boneless chicken breasts
1/2 tsp Salt
1tsp Jamaican Jerk seasoning
1/4 cup fresh minced Cilantro (i didnt use this)
1/4 cup finely chopped red onion
1Tbsp Chopped fresh mint
1tsp brown suger
2tsp fresh lime juice
1/4 tsp black pepper
1/4 tsp Crushed red pepper (i used more, i like spicy)
1 1/2 med size fresh mango about 2 cups diced
(you can buy jar sliced peeled mango such as Del Monte sunfresh brand 16oz jar if you want, i prefer fresh)
1. Heat a large nonstich skillet over med-high heat. Sprinkle Jerk seasoning and salt evenly over chicken. Coat chicken with cooking spray. Add chicken to the pan, cook 4 minutes each side or until done.
2. While chicken cooks, combine 1/4 tsp salt, cilantro, and remaining ingredients for salsa. (i make this ahead of time and let it sit in the fridge to marinate/meld flavors)
calories 244 fat 2.4 fiber 1.6 (using 1/2cup of salsa for a serving only 5 points!)
Sautee'd Brussel Sprouts
12 or so Fresh brussel sprouts ends trimmed and quartered
2 Tbsp olive oil
1Tsp crushed red pepper flakes (optional)
1/4 cup white wine (can substitute chicken stock)
1/4 red onion sliced
1. In a large skillet heat up the olive oil on med-high heat. Toss in onions and Brussel sprouts. Toss to coat in oil and carmelize, brown lightly the sprouts, about 3-4 minutes. Sprinkle in the crushed red pepper flakes and toss. Then pour in white wine cover and simmer for about 4 minutes.
This is what I had for dinner and it took maybe 1/2 hour to 45minutes to prepare, cook, and eat! that's pretty darn fast.
Today was a pretty mellow day for me. Not much going on in my life to talk about. I hope you try this recipie, I found it really yummy!
Accountability Statement for today:
I made it to the Gym! Woo hoo! It was a good workout on the legs and a mile on the tredmill. I increased the weight on some of the machines because it was starting to get kinda easy to do. That in itself is a non scale victory (NSV) for me.
