Weigh in today!

Today at the Gym the scale was kind, I am down 1 1/2 more pounds! YAY for me!! This makes a total of 11.6 in 6 weeks time. Not bad.
I am a Pizza fanatic. I cannot live the rest of my life and never have pizza again. The problem with most pizza's is they are sooooo fattening. I mean the points for One measley slice of pizza is anywhere from 5 to 10 points and it can get higher if you're not careful. So lately I have been finding ways to get in a pizza fix without killing myself in points/calories.  This has led me to the flatbread craze. Man this is the best way to make a low point pizza and keep it healthy! All I do is crisp up a flatbread on a pizza stone in the oven for 3 minutes on 400 degrees, take it out and top it with whatever I want and pop it back in for 2 minutes to melt the cheese.  Tomorrow's variety will have fresh tomatoes that I am maranating in garlic basil and balsalmic vinegar, topped off with mozzarella cheese. I so cannot wait for this!
Well I am discovering that it is pretty hard to come up with things to say in a blog when you do it everyday. So that's it for today.  Hopefully I'll have tons more to say next time I write! thanks for reading!!

Accountability Statement:
Went to the gym today as you already know. I chose to get on the elliptical today because nearly all the tredmills were being used. I was thrilled to learn that I can now go 15 minutes on the elliptical before I feel like falling over. The very first day I tried it I could only do 8 minutes and I pushed it to get there. So I am very happy about that. My endurance is building up! So EXCITING!!

  1. Yay Judy!! You are doing so great, I'm so proud of you and I love your blog. As you know I made some pizzas with flat bread on Saturday, but I think I forgot to tell you, I sprinkled a little olive oil on the flatbread, then topped it with sauce and toppings and put it in the oven for 7 minutes. Not sure if it really made that much of a difference, but the edges were crispy and the middle was soft, in a good way!

  2. that's a good idea! I've considered brushing the flatbread with olive oil myself but never did it. thanks!
